Salmon baked in pomegranate sauce
Ingredients
- Salmon 1 piece
- Salt to taste
- Allspice berries to taste
- Ground Black Pepper to taste
- Mixed salad greens 5 oz
- Courgette 1 piece
- Marinated cherries 4 pieces
- Sweet Red Onion 1 head
- Sugar a pinch
- Olive Oil 0 fl oz
- Dijon Mustard 1 teaspoon
- Black Pomegranate Molasses 1 cup
- Lemon 1 piece
- Meyer Lemon Juice to taste
Step-by-Step Guide
Step 1
For the salad: prepared salad mix, cucumber, cherry tomatoes, onion.
Step 2
Dressing for the salad: salt, a pinch of sugar, lemon juice, olive oil, grainy mustard.
Step 3
Marinate the salmon steak in pomegranate juice and spices (salt, allspice berries, freshly ground black pepper). Add a couple of lemon slices and let it sit for 30 minutes. Then place the fish on a 'bed' of onion, pour the marinade over it, and bake in the oven for 25–30 minutes.
Step 4
When serving, drizzle with lemon juice and pour over the sauce.
