Ingredients

- Smoked haddock fillet 0 lbs
- Puff Pastry 20 oz
- Ground Black Pepper ¼ teaspoon
- Chicken Egg 1 piece
Step-by-Step Guide
Step 1
Finely chop the basil leaves and dill. Mix with softened butter, lemon zest, and a little salt. This aromatic mixture will give the dish a special flavor.
Step 2
Remove any bones from the salmon fillet, rinse it under cold water, and pat it dry with paper towels. Line a baking sheet with parchment paper. Cut the whole fillet in half, placing one half skin-side down on a lightly rolled out sheet of puff pastry. The sheet should be large enough to wrap the fish with a little extra. Season the fillet with salt and pepper.
Step 3
Evenly spread the herb and butter mixture over the fillet.
Step 4
Cover with the remaining half of the fillet, season with salt and pepper.
Step 5
Brush the pastry around the fish with beaten egg and wrap the fish, slightly pressing the seams together. It should resemble an envelope. Trim any excess pastry.
Step 6
Brush the top of the pastry with the remaining egg and use a sharp knife to create a light pattern, such as a lattice or any design of your choice.
Step 7
Bake in a preheated oven at 375°F for 20–25 minutes. The pastry should be cooked through and golden. The dish can be served warm or cooled, cut into portioned pieces.
