Salmon Baked in Foil with Vegetables
Main Dishes • European
Description
Red fish doesn't appear on our table as often as we would like, so I try to make it as delicious and healthy as possible. Baking in the oven in foil is one such method. You can use sockeye salmon, regular salmon, or trout for this recipe.
Ingredients
- Fresh Mushrooms 5 oz
- Onion 1 piece
- Meyer Lemon Juice to taste
- Hard Cheese 0 oz
- Spices to taste
- Potato 1 piece
- Herbs 1 bunch
- Steaks 2 pieces
Step-by-Step Guide
Step 1
Drizzle the salmon with lemon juice, then season with salt and pepper.
Step 2
Dice the onion and sauté it.
Step 3
Add the mushrooms and sauté them together for a bit. Season with salt.
Step 4
Make a rectangle out of the foil and fold it in half to create a square that can easily wrap the fish. Make sure the shiny side is facing up.
Step 5
Slice the tomato into rings.
Step 6
Grate the cheese or slice it into pieces.
Step 7
Place the fish in the center of the foil, then top each piece with tomato slices.
Step 8
Add the mushrooms and cheese on top of the salmon and tomatoes. Wrap the foil tightly.
Step 9
Place the fish with tomatoes, mushrooms, and cheese in a preheated oven at 430°F (428 degrees Fahrenheit) for 20–25 minutes.
