Ingredients

  • Hot smoked pink salmon 1 piece
  • Salt to taste
  • Meyer Lemon Juice 3 spoons
  • Ground Black Pepper to taste
  • Hard Cheese 10 oz
  • Mayonnaise 5 teaspoons

Step-by-Step Guide

Step 1

Clean the fresh pink salmon, gut it, cut it lengthwise, remove the backbone, and cut it into portion-sized pieces. From one medium fish, you can get about six pieces.

Step 2

Fold individual molds out of foil, place a piece of fish in each with the skin side down, sprinkle with salt and pepper, drizzle with lemon juice, and let sit for about 10 minutes to allow the juice to soak in and soften the fish's aroma.

Step 3

Spread a thin layer of mayonnaise on top and sprinkle with grated hard cheese.

Step 4

Wrap the edges of the foil to completely enclose the salmon, making sure they do not touch the top layer of cheese. Place in the preheated oven and bake for about 20 minutes. It is very important not to overcook, or the salmon may become dry.

Step 5

Serve hot, directly in the foil.
