Saffron Pilaf with Caramelized Onions, Fried Almonds, and Raisins
Ingredients
- Water 0 qt
- Saffron ¾ teaspoon
- Olive Oil 5 fl oz
- Chopped almonds 5 oz
- Onion 2 pieces
- Basmati rice 20 oz
- Raisins 5 oz
Step-by-Step Guide
Step 1
In a small bowl, mix saffron with 2 tablespoons of hot water. Let it sit for a while.
Step 2
Heat olive oil in a deep pot over medium heat and add the almonds. Fry for about 3 minutes, stirring, until golden brown. Use a slotted spoon to transfer them to a paper towel.
Step 3
In the same pot, sauté 2 finely chopped onions, stirring, until golden brown (15-20 minutes). Transfer half of the onions to a bowl.
Step 4
To the pot with the onions, add the rice and sauté, stirring, for 2 minutes. Add 1.1 liters of water, saffron, 1.5 teaspoons of salt, and 0.5 teaspoons of pepper. Bring to a boil, reduce to low heat, cover, and cook until all the liquid is evaporated and the rice is tender (about 18-20 minutes). Turn off the heat and let it sit covered for 5 minutes.
Step 5
While the rice is resting, add the almonds and raisins to the bowl with the onions and mix well.
Step 6
Fluff the rice with a fork and transfer it to a serving bowl. Top with the almond mixture.
