
Rustic Potatoes with Fajitas (Mexican-style Meat)

Description
Potatoes or meat can be topped with sour cream. Instead of chicken, you can also prepare it with beef or pork, if desired. Fajitas are typically served in a tortilla or lavash, but I omitted that.
Ingredients
- New Potatoes 6 pieces
- Safflower Oil 2 tablespoons
- Salt to taste
- Poultry 20 oz
- Onion 1 piece
- Mild Chili Spice 1 piece
- Orange Bell Peppers 1 piece
- Canned Pork with Beans 1 can
- Spices to taste
Step-by-Step Guide
Step 1
Wash the potatoes with skin thoroughly and cut them into 6 pieces.
Step 2
Add spices, salt, and vegetable oil, and mix well.
Step 3
Spread the potato wedges on a baking sheet. Bake for 20 minutes.
Step 4
Then flip them to the other side and bake for another 10 minutes.
Step 5
Cut the red bell pepper into thin strips and the onion into half-rings.
Step 6
Slice the chili pepper in half and scrape out all the seeds and white membranes (if you are not a fan of spiciness, you can use just half of the pepper; if you do enjoy some heat, you can use the whole pepper). Chop it finely into half-rings.
Step 7
Cut the meat into very thin strips.
Step 8
In a separate skillet, heat vegetable oil. First, add the chili pepper and sauté for 2-3 minutes, then add the onion and bell pepper. Sauté until the onion becomes translucent.
Step 9
Sauté the meat in a heavy-bottomed skillet with a small amount of oil until golden brown.
Step 10
Add the peppers and onion to the meat, season with salt and herbs to taste. Sauté everything together for about 5 minutes, stirring constantly to prevent burning.
Step 11
Now add the beans, reduce the heat, and cover with a lid. Simmer everything together for about 7-10 minutes.
