Rustic Potatoes with Apples and Carrots

Ingredients

  • New Potatoes 5 pieces
  • Apple 3 pieces
  • Carrot 2 pieces
  • Tkemali (plum sauce) to taste
  • Salt to taste
  • Chicken Seasoning to taste
  • Olive Oil 1 tablespoon

Step-by-Step Guide

Step 1

Wash the potatoes with a brush, do not peel (if the potatoes are not young, peel them). Cut into wedges and place in a baking dish greased with olive oil. Sprinkle with salt and seasonings.

Step 2

Peel the carrots. Remove the core from the apples (you can peel them if desired). Grate the carrots and apples on a coarse grater. Add to the baking dish with the potatoes and mix.

Step 3

Place in a preheated oven at 410°F.

Step 4

After 15 minutes, check: if the apples and carrots haven't released enough juice, add a little water and stir.

Step 5

Bake until the potatoes are cooked through.

Step 6

You can add tkemali sauce to the finished dish.
