A classic recipe, the very potato that is so delightful to devour at some roadside fast food spot. It's easy to prepare; the main thing is to choose good potatoes—fresh, firm, and juicy. Such a tuber will form a light yet noticeable crust while keeping the inside tender and fluffy. There should be a nice contrast between the crust and the flesh, enhanced by a beautiful blend of spices including paprika, nutmeg, chili, and garlic, which are traditionally used to season rustic potatoes. Serve the classic rustic potatoes with a classic sauce—a mix of sour cream and mayonnaise, with added garlic and herbs.

- Paprika 1 tablespoon
- Turmeric ½ spoons
- Ground Dried Garlic ½ spoons
- Nutmeg to taste
- Mild Chili Spice to taste
- Ground Black Pepper to taste
- Sour Cream 5 oz
- Mayonnaise 0 oz
- Garlic 2 cloves
- Parsley 0 oz
- Dill 0 oz
- Salt 1 tablespoon
Step-by-Step Guide
Step 1
Wash the potatoes thoroughly and, without peeling, cut them into wedges. Cut larger tubers into six to eight pieces, and smaller ones into four.
Step 2
Pat the potatoes dry with a paper towel.
Step 3
Mix together vegetable oil, salt, paprika, dried garlic, turmeric, nutmeg, and black pepper. You can add a bit of ground chili if you prefer it spicier.
Step 4
Toss the spice mix with the potatoes until all the pieces are coated.

Place the potato wedges on a baking tray lined with parchment paper (for even cooking, it's best to place them skin side down) and bake in a preheated oven at 355°F for 30–40 minutes. The finished potatoes should be tender and easily pierced with a fork.
Step 6
While the potatoes are baking in the oven, prepare the sauce. To do this, finely chop the dill and parsley.
Step 7
Mix the sour cream, mayonnaise, herbs, and crushed garlic. If needed, season the sauce with salt to taste.
Step 8
Serve the cooked potatoes with a sour cream sauce.
