Such a tuber will form a light yet noticeable crust while keeping the inside tender and fluffy. There should be a nice contrast between the crust and the flesh, enhanced by a beautiful blend of spices including paprika, nutmeg, chili, and garlic, which are traditionally used to season rustic potatoes. Serve the classic rustic potatoes with a classic sauce—a mix of sour cream and mayonnaise, with added garlic and herbs.

Wash the potatoes thoroughly and, without peeling, cut them into wedges. Cut larger tubers into six to eight pieces, and smaller ones into four.

Pat the potatoes dry with a paper towel.

Mix together vegetable oil, salt, paprika, dried garlic, turmeric, nutmeg, and black pepper. You can add a bit of ground chili if you prefer it spicier.
