Rum-Marinated Grilled Lamb Leg with Peaches
Ingredients
- Boneless Lamb Leg 1 piece
- Chicken Broth 1 cup
- Rum 0.3 cups
- Lime Juice ¼ cup
- Brown Sugar 2 tablespoons
- Salt ¼ teaspoon
- Ground Black Pepper ¼ teaspoon
- Ground clove ½ teaspoon
- Garlic 2 cloves
- Canned Peaches 15 oz
Step-by-Step Guide
Step 1
Trim excess fat from the meat and cut it so that the piece is evenly flat. In a bowl, mix the broth, rum, lime juice, sugar, black and allspice, salt, and minced garlic. Pour into a large bag and add the meat. Mix well, seal tightly, and refrigerate overnight.

Preheat the grill.

Place the meat on the grill and cook for about 20 minutes on each side until done.

Meanwhile, pour the marinade into a saucepan, bring to a boil, and cook until the volume is reduced by half.

Slice the meat into pieces and arrange on plates. Top with sliced peaches and drizzle with the sauce.
