Step 1
Wash the prepared, cleaned medium-sized chicken, season with salt, sprinkle with pepper, place it on a metal spit, threading it diagonally from the leg to the wing, and roast over hot coals (without flames) for 20-30 minutes. While roasting, brush the chicken with butter and turn the spit to ensure even cooking.
Step 2
When serving, remove the chicken from the spit, place it on a warmed platter, and garnish with lettuce leaves, fresh or lightly salted cucumbers, and fresh or canned tomatoes.
