Roasted Turkey with Vegetables in White Wine
Ingredients
- Turkey 20 lbs
- Coarse Salt 20 oz
- Butter 5 oz
- Onion 2 heads
- Carrot 4 pieces
- Celery stalk 4 pieces
- Thyme 2 sprigs
- Bay leaf 1 piece
- Dry White Wine 1 cup
Step-by-Step Guide
Step 1
Rub the turkey inside and out with coarse salt, place it in a large dish, and cover with cold water. Cover with a lid and leave in the refrigerator for 12 hours or overnight.
Step 2
Preheat the oven to 355°F.
Step 3
Rinse the turkey well and pat dry.
Step 4
Spread half of the softened butter over the turkey and place it in the dish, breast side down.
Step 5
Finely chop the onion, carrot, and celery.
Step 6
Stuff the turkey with half of the chopped vegetables, a sprig of thyme, and the bay leaf.
Step 7
Scatter the remaining vegetables and thyme around the turkey and pour the wine over it.
Step 8
Roast the turkey uncovered for 3.5 to 4 hours. Carefully turn it over two-thirds of the way through and baste with the remaining butter.
Step 9
Remove from the oven and let it rest for 30 minutes.
