Roasted pork shoulder
Ingredients
- Boneless pork shoulder 5 lbs
- Orange juice concentrate 5 fl oz
- Red Wine Vinegar 5 fl oz
- Brown Sugar 0 oz
- Coarse Salt 0 oz
- Olive Oil 2 spoons
- Dried Rosemary 2 spoons
- Ground Cumin 2 spoons
- Ground Black Pepper 0 oz
- Garlic 40 cloves
Step-by-Step Guide
Step 1
Mix the juice, vinegar, sugar, salt, pepper, oil, oregano, cumin, and crushed garlic in a bowl. Set aside.
Step 2
Using a sharp knife, make shallow cuts all over the surface of the meat, then place it in a deep baking dish and pour the marinade over it. Refrigerate for 6 hours, turning the meat occasionally and basting it with the marinade.
Step 3
Preheat the oven to 320°F and roast the meat for 5 hours, basting it occasionally with the marinade and turning it from side to side. Serve sliced, accompanied by braised cabbage and/or mashed potatoes.
