Roasted Lamb Shoulder in Aromatic Herb Marinade
Ingredients
- Lamb Shoulder 5 lbs
- Scallions 5 oz
- Cilantro 5 oz
- Dill 5 oz
- Parsley 5 oz
- Tarragon 5 oz
- Garlic ½ head
- Vegetable Oil 5 fl oz
- Ground Black Pepper to taste
- Dry White Wine 10 fl oz
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Wash the herbs and dry them, peel the garlic.
Step 3
Blend the herbs in a blender with garlic, vegetable oil, black pepper, and wine until a sauce-like consistency is achieved.
Step 4
Trim excess fat and membranes from the lamb shoulder.
Step 5
Rub the meat with the prepared marinade, cover with plastic wrap, and leave in the refrigerator overnight.
Step 6
Preheat the oven to 390°F (392 degrees Fahrenheit), place the meat in a baking dish, and roast for 20 minutes.
Step 7
Remove the dish, cover the meat with foil, reduce the temperature to 320°F (320 degrees Fahrenheit), and roast for 1.5 to 2 hours.
Step 8
Remove the foil, increase the temperature to 390°F (392 degrees Fahrenheit), and roast for another 15 to 20 minutes to achieve a caramelized crust.
Step 9
Remove from the oven and let the meat rest for 10 minutes before slicing.
Step 10
Serve the dish hot with roasted vegetables, fresh bread, or a fragrant yogurt and herb-based sauce.
