Ingredients
- Lamb Neck Fillet 5 lbs
- Onion 3 pieces
- Carrot 2 pieces
- Chicken Broth 15 fl oz
- Espresso 5 fl oz
- Heavy cream 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat a cast-iron skillet, add vegetable oil, and sear the lamb leg on all sides, seasoning it with salt and pepper.
Step 2
Set the meat aside, and in the same pan, sauté the roughly chopped carrots and onions.
Step 3
Pour the broth over the vegetables and return the leg. Place in an oven preheated to 355°F for one hour.
Step 4
After an hour, pour coffee and cream over the lamb leg and continue roasting for another hour.
Step 5
Remove the meat from the oven and place it on paper towels. Transfer the meat juices to a saucepan and reduce until thickened, then strain and serve alongside the lamb and vegetables.
