The often-overlooked Jerusalem artichoke is a wonderful alternative to potatoes, sweet potatoes, and turnips. It is more delicate than potatoes and healthier. Cooking it is not a problem, just be careful not to overcook. In this case, we prepare it with mushrooms. It's very simple—the cooking method is the same as for potatoes, but much quicker. Instead of basil, you can use any other fresh herbs. Use a minimal amount of salt. This is a vegan and very tasty dish. Enjoy your meal!

- Jerusalem Artichoke 2 pieces
- Morels 2 pieces
- Basil 3 sprigs
- Salt to taste
- Vegetable Oil 0 fl oz

Step 1
Prepare the ingredients.

Peel the Jerusalem artichokes and remove any eyes.
Step 3
Cut into small slices.
Step 4
Add oil to a heated skillet.
Step 5
Place the slices of Jerusalem artichoke in the skillet.

While the Jerusalem artichokes are frying, slice the mushrooms.

Add the mushrooms to the already browned Jerusalem artichokes.

Add a little salt.
