Roasted Duck Breast
Ingredients
- Duck Skin 1 piece
- Pizza Spice Mix to taste
- Allspice berries to taste
- White Pepper (whole) to taste
- Salt to taste
Step-by-Step Guide
Step 1
Let the duck sit at room temperature for about 5–10 minutes.
Step 2
Cut the fillet in half and make incisions in the skin.
Step 3
Place the breast skin-side down in a dry, hot skillet. Season with salt.
Step 4
Add the peppercorns to the rendered fat.
Step 5
Once the skin is nicely browned, flip it over.
Step 6
Baste the breast with the fat from the pan.
Step 7
Season with spices, add salt, and reduce the heat to medium.
Step 8
After 2 minutes, transfer the duck to a baking dish. Drizzle with fat on top.
Step 9
Place in a preheated oven at 320°F (160°C) for 8 minutes.
Step 10
Transfer to a serving platter and serve.
