Roasted chickpeas
Ingredients
- Chickpea 20 oz
- Butter 5 oz
- Onion 1 piece
- Activated Baking Soda ¼ spoons
- Tomatoes 3 pieces
- Paprika 1 tablespoon
- Homemade Chicken Sausage ½ pieces
- Salt to taste
Step-by-Step Guide
Step 1
Place the peas in a spacious bowl, cover them with warm water, and add a pinch of baking soda and salt. Let them soak for at least 12 hours.
Step 2
Drain the water and rinse the peas. Bring salted water in a pot to just below boiling point, add the peas, cover with a lid, reduce the heat to medium, and cook for 2-3 hours until the peas are soft: the cooking time depends on the age of the peas and the softness of the water.
Step 3
During this time, finely chop the onion and tomatoes. Peel the sausage, which should be about the size of a finger, and slice it thinly.
Step 4
Melt the butter in a skillet, add the onion, and cook over low heat, stirring, for 5 minutes until it becomes soft and translucent. Add the tomatoes and cook for another 10 minutes, crushing them with a spatula. Stir in the paprika and chorizo, then remove the skillet from the heat.
Step 5
Drain the peas through a colander and transfer them to a skillet. Cook over high heat, stirring, for 5 minutes. Serve immediately.
