Roasted Chickens with Grapes and Thyme
Ingredients
- Light Raisins, Seedless 10 oz
- Seedless Green Grapes 10 oz
- Shallot 8 pieces
- Thyme 6 sprigs
- Olive Oil 2 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
- Poultry 4 pieces
Step-by-Step Guide
Step 1
Preheat the oven to 445°F.
Step 2
In a baking dish, mix both types of grapes with peeled and halved shallots, thyme, and olive oil. Season with salt and pepper.
Step 3
Tie the legs of the chickens with string and place them on top of the grapes, breast side up. Season with salt and pepper.
Step 4
Place in the oven, basting with the juices that accumulate, until cooked through, about 30–35 minutes.
