- Shallot 20 oz
- Olive Oil 2 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
- Veal Tenderloin 25 oz

Step 1
Preheat the oven to 390°F.
Step 2
Cut the potatoes and shallots into quarters and toss them with olive oil, salt, and pepper.
Step 3
Arrange the vegetables on a baking sheet around the meat, and place the meat in the center. Roast in the oven for 40–50 minutes until the meat and vegetables are cooked through.
Step 4
