Roast Pork Belly with Crackling

Ingredients

  • Onion 2 pieces
  • Salted pork belly 5 lbs
  • Apple 3 pieces
  • Thyme ½ bunch
  • Olive Oil to taste
  • Ocean salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Pat the pork belly dry and wipe off excess fat. Use a paper towel to dry the pork. Rub half of the salt into the skin and cuts. Leave for 30 minutes.

Step 2

Preheat the oven to 320°F.

Step 3

In a deep baking dish, place the onions, apples, and thyme, drizzle with olive oil, and season well with salt and pepper. Place the pork on top of the onions and apples and pat it dry again with a paper towel. Sprinkle the remaining salt over the meat and drizzle with oil. Rub it into the meat, then sprinkle with sea salt.

Step 4

Place the dish in the hottest part of the oven and roast for one and a half hours. Increase the temperature to 375°F and roast for another 45 minutes to 1 hour, until the crackling is crispy. Remove the pork from the oven and let it rest in a warm place for 15 minutes.

Step 5

Remove the crispy crackling with salt from the pork to cut it into thin strips later. Slice the meat into even pieces. Serve the pork with crispy pieces of crackling on slightly warm plates, garnished with roasted apples and onions.
