- Goose fat 10 lbs
- Ocean salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 375°F.
Step 2
Pierce the skin of the goose in several places with a skewer — this will allow excess fat to render during cooking. Trim any excess fat and rub the bird with salt and pepper.
Step 3
Place on a baking sheet and cover with foil. Put it in the oven for about 3.5 hours until cooked through. Remove the foil 30 minutes before the end of cooking to allow the skin to brown.
Step 4
Remove from the oven and let it rest for 20 minutes. Serve with any sauce.
