Roast Duck in Dry Sherry

Ingredients

  • Duck 5 lbs
  • Olive Oil 6 tablespoons
  • Medium-dry sherry 15 fl oz
  • Dried Rosemary 3 teaspoons
  • Dried Rosemary 3 teaspoons
  • Fresh basil leaves 3 teaspoons

Step-by-Step Guide

Step 1

Rinse the duck well, dry it, and pierce it with a skewer in 15-20 places to allow better marination.

Step 2

In a large bowl, mix 240 ml of sherry and 3 tablespoons of olive oil. Place the bird in the marinade, coat it well, cover, and refrigerate overnight, turning occasionally.

Step 3

Preheat the oven to 375°F.

Step 4

Remove the duck from the marinade and rub it with the mixture of oregano, basil, and rosemary. Coat the inside with the marinade.

Step 5

Place the bird in a baking dish and pour the remaining sherry over it.

Step 6

Roast until cooked through (about 30 minutes for every 450 grams), basting every 30-40 minutes.
