Roast chicken with rosemary

Ingredients

  • Rosemary 2 pieces
  • Garlic 3 cloves
  • Olive Oil 2 spoons
  • Balsamic Vinegar 1 tablespoon
  • Poultry 1½ kg
  • Chicken Broth 5 fl oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 390°F.

Step 2

Place a sprig of rosemary, garlic, and balsamic vinegar inside the chicken. Generously season with salt and pepper. Tie the legs together.

Step 3

Brush the skin of the chicken with olive oil, then pour the remaining oil onto the baking tray. Place the chicken in the tray, breast side up. Sprinkle with chopped rosemary.

Step 4

Place in the oven and roast for 1 hour, turning every 15 minutes and basting with the juices.

Step 5

Transfer the chicken to a warm plate and remove the sprig of rosemary. Pour the fat from the chicken into the skillet and add the broth. Bring to a boil and cook until it thickens. Season with salt and pepper to taste, then pour into a sauceboat.

Step 6

Serve with boiled potatoes sprinkled with rosemary.
