Step 1

Rinse the meat (tenderloin, thin end, or fillet), trim the tendons, season with salt, and place it whole on a preheated baking sheet or skillet with oil, lightly browning it.

Step 2

Then place it in the oven and roast until done. Baste the meat with the juices every 10-15 minutes. If there is not enough juice, you can add a little broth or water. The roasting time depends on how you prefer your roast beef - well done, medium, or rare.

Step 3

When the roast beef is ready, remove it from the skillet, slice it, and arrange it on a platter. You can serve sliced carrots and green peas dressed with oil, potatoes (boiled, fried, in milk, or as mashed potatoes), and grated horseradish as a side. Drizzle the strained juices from roasting and melted butter over the meat.
