Ingredients

  • Basmati rice 1 cup
  • Carrot 1 piece
  • Courgette ½ piece
  • Onion 1 head
  • Tofu 5 oz
  • Water 1½ cups
  • Vegetable Oil 2 tablespoons
  • Cinnamon 1 piece
  • Turmeric 1 teaspoon

Step-by-Step Guide

Step 1

Rinse the rice. Pour water over it and place it on the heat.

Step 2

Add the cinnamon stick, bring to a boil, cover with a lid, and reduce the heat to the minimum.

Step 3

After about 10 minutes, remove the rice from the heat and let it steam, keeping the lid on.

Step 4

Heat the oil in a deep pot over medium heat, add turmeric, onion, and diced carrot. A couple of minutes before the carrot is ready, add the zucchini, tofu, and rice. Simmer for a few more minutes.

Step 5

Cover with a lid and remove from heat.

Step 6

Turmeric will give the rice a beautiful yellow hue — this additionally aids digestion.
