Rice with Saffron and Pomegranate Seeds
Ingredients
- Shallots 2 heads
- Butter 3 tablespoons
- Water 3 tablespoons
- Basmati rice 2 cups
- Cardamom 2 pieces
- Star anise 2 pieces
- Saffron 1 teaspoon
- Salt 1 teaspoon
- Pistachios ¾ cup
- Pomegranate Seeds ¾ cup
- Chopped Cilantro ¾ cup
Step-by-Step Guide
Step 1
Melt the butter in a saucepan and sauté the shallots over high heat for 1 minute.
Step 2
Stir in the rice, add water, cardamom, star anise, saffron, and salt, and bring to a boil.
Step 3
Then cover with a lid and simmer on low heat for about 20 minutes, until the liquid is absorbed and the rice is tender.
Step 4
Remove the cooked rice from heat and gently mix in the pistachios, pomegranate seeds, and cilantro. Serve.
