Ingredients

  • Olive Oil 2 tablespoons
  • Onion 1 head
  • Jalapeño pepper 1 piece
  • Ground Dried Garlic 0 oz
  • Rice 2 cups
  • Chicken Broth 15 fl oz
  • Canned Green Chili Pepper 5 oz
  • Salt ½ teaspoon
  • Cilantro 0 oz

Step-by-Step Guide

Step 1

Heat the oil in a large pot over medium or high heat.

Step 2

Add the onion and cook for 2 minutes.

Step 3

Add the jalapeño and garlic, cooking for 2-3 minutes until the onion softens and begins to color.

Step 4

Add the rice and cook, stirring constantly, until the grains become translucent, about 1-2 minutes.

Step 5

Pour in the broth and 1 cup of water, bringing it to a boil. Stir in the chili pepper and salt.

Step 6

Cover with a lid, reduce the heat, and cook for 15-17 minutes or until all the liquid is absorbed and the rice is tender.

Step 7

Stir in the cilantro before serving.
