Ingredients

  • Poultry 1 piece
  • Paella rice 2½ cups
  • Mild Chili Spice 2 pieces
  • Chicken Broth 2½ cups
  • Spanish onions 1 piece
  • Saffron a pinch
  • Garlic 2 cloves
  • Butter 2 tablespoons
  • Parsley 1 bunch
  • Salt to taste
  • Ground Black Pepper to taste
  • Vegetable Oil 4 tablespoons

Step-by-Step Guide

Step 1

Season the chicken pieces with salt and pepper, fry in vegetable oil, and set aside, keeping warm.

Step 2

Dry the saffron in a pan (or tablespoon), crush it with salt, pour boiling water over it, let it steep, and add it to the broth.

Step 3

Peel and finely chop the onion and chili peppers, sauté with oil until soft, then add garlic puree. Add the chicken pieces, sprinkle in the rice, and fry until the oil is absorbed, then pour in the broth, bring to a boil, cover, and cook on low heat for 20 minutes, stirring a couple of times.

Step 4

Season with salt and pepper, add finely chopped parsley, add butter in pieces, stir, cover, and let sit for 5-10 minutes.
