Rice Porridge with Rabbit and Prunes

Ingredients
- Rice 2 cups
- Rabbit 20 oz
- Onion 2 heads
- Pitted Wild Apricots 5 oz
- Vegetable Oil 1½ tablespoons
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Rinse the rice and drain it in a colander.
Step 2
Peel, wash, and slice the onion into thin half-rings.
Step 3
In a heavy-bottomed pot, heat the vegetable oil, add the onion, and sauté until golden brown.
Step 4
Add the rice to the pot, stir, season with salt, and pour in water so that it covers the rice by 1.5–2 cm.
Step 5
Cover the pot with a lid and place it over high heat.
Step 6
When the water boils, reduce the heat, add the rabbit meat, pepper, and prunes, and cook the porridge for another 15 minutes.
