Ingredients
- Rice Noodles 5 oz
- Garlic 2 cloves
- Grated Ginger Root to taste
- Mild Chili Spice 1 piece
- Vegetable Oil 2 tablespoons
- Courgette 1 piece
- Tofu 5 oz
- Carrot 1 piece
- Soy Sauce to taste
Step-by-Step Guide
Step 1
Cook the rice noodles according to the package instructions, drain, and rinse.
Step 2
Heat the oil in a wok and sauté the chopped chili pepper, minced garlic, and grated ginger.
Step 3
Cut the zucchini and carrot into thin strips using a vegetable peeler.
Step 4
Add the carrot to the wok first, stir, and sauté over medium heat for about five minutes, then add the zucchini and sauté for another three minutes.
Step 5
Add the noodles and cubed tofu to the wok, pour in the soy sauce, and mix everything together. Simmer for another three minutes.
