Ingredients

  • Rice Noodles 5 oz
  • Soy Sauce 2 teaspoons
  • Rice Vinegar 1 teaspoon
  • Sugar 1 teaspoon
  • Canola Oil 2 teaspoons
  • Onion 0 oz
  • Minced garlic 1 clove
  • Red Bell Pepper ½ piece
  • Broccoli 5 oz
  • Chopped roasted peanuts to taste

Step-by-Step Guide

Step 1

Bring 2 cups of water to a boil in a pot. Add the rice noodles. Remove from heat and let sit for 5-7 minutes until the noodles swell. Drain the noodles in a colander and discard the water.

Step 2

In a small bowl, whisk together the soy sauce, rice vinegar, sugar, chili sauce, and ¼ cup of water. Set aside.

Step 3

Heat the oil in a skillet over medium heat. Add the onion and garlic, sautéing for 1 minute while stirring. Add the bell pepper and broccoli, and sauté for another minute.

Step 4

Add the prepared sauce, bring to a boil, and simmer for another minute or until the broccoli and bell pepper are tender. Add the noodles.

Step 5

Serve, sprinkled with chopped roasted peanuts to taste.
