Rice Noodles with Arugula and Shrimp

Ingredients

  • Rice Noodles 5 oz
  • Arugula 10 oz
  • King Prawns 8 pieces
  • Garlic 4 heads
  • Celery stalk 2 pieces
  • Sweet Pepper 0 oz
  • Olive Oil 2 tablespoons
  • Grated Ginger Root 0 oz
  • Oyster Mushrooms 4 tablespoons
  • Water 0 fl oz
  • Sweet Chili Sauce to taste

Step-by-Step Guide

Step 1

Soak the rice noodles in boiling water and set aside. Finely chop the garlic and add it to a hot skillet with olive oil. Finely chop the ginger and celery stalk. Add them to the garlic once it is golden brown. Sauté the vegetables over medium heat and add the sweet pepper (it can also be chopped into cubes or thin strips).

Step 2

Thaw the shrimp, clean them, and remove the intestines. Season with salt and pepper, and you can add a bit of garlic. Sauté for about 2 minutes in the skillet and remove from heat.

Step 3

Drain the rice noodles; if they are still too firm, pour boiling water over them again and let them sit for a bit longer. Drain and cut them crosswise with scissors directly in the colander. Add to the skillet with the vegetables. Pour in the oyster sauce. Simmer until the noodles become transparent. If the noodles still seem too rough, add water. Simmer a bit more. Remove from heat and let cool slightly.

Step 4

In a deep bowl, mix the arugula and noodles with the vegetables.

Step 5

Serve on a plate, garnished with shrimp. Serve with chili sauce.
