Rice Casserole with Vegetables and Mushrooms

Ingredients
- Rice 2 cups
- Morels 15 oz
- Carrot 1 piece
- Orange Bell Peppers 1 piece
- Orange Bell Peppers 1 piece

- Onion 1 head
- Garlic 4 cloves
- Parsley 1 bunch
- Hard Cheese 5 oz
- Vegetable Oil 1 cup
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Peel, wash, and dice the onion and carrot, then sauté in 50 ml of vegetable oil.
Step 2
Wash the bell peppers, remove the stems and seeds, and dice them.
Step 3
Clean the mushrooms, wash them, cut them into quarters, and add them to the skillet with the carrot and onion along with the bell peppers. Sauté everything together for another 4-5 minutes.
Step 4
Wash the rice, place it in a saucepan with 30 g of heated vegetable oil, lightly fry, and add water so that it covers the rice by 1.5-2 cm.
Step 5
Bring to a boil, then reduce the heat, add salt, and cook the rice covered until done.
Step 6
Peel, wash, and chop the garlic.
Step 7
Combine the cooked rice with the vegetables and mushrooms, sprinkle with pepper and garlic, and simmer for 5 minutes.
Step 8
Grate the cheese on a coarse grater.
Step 9
Transfer the finished mixture to a greased saucepan and sprinkle with grated cheese.
Step 10
Place the saucepan in a preheated oven for 15 minutes.
Step 11
Before serving, sprinkle each portion of the casserole with chopped parsley.
