Rice and Quinoa Pilaf
Ingredients
- Basmati rice 1 cup
- Dried Currants 5 oz
- Dried Barberry 2 tablespoons
- Saffron 1 teaspoon
- Olive Oil 1 cup
- Roasted pine nuts 5 oz
- Green Bell Pepper 1 piece
- Red Bell Pepper 1 piece
- Coarse Salt to taste
- Ground White Pepper to taste
- Quinoa 1 cup
Step-by-Step Guide
Step 1
In a pot, bring 2 cups of water to a boil, add the rice, currants, barberry, and saffron. Reduce the heat to medium and cook covered for 12-14 minutes until the rice is tender. Transfer the rice to a bowl, cover with plastic wrap, and set aside.
Step 2
Add the quinoa and 1 cup of water and bring to a boil. Reduce the heat to low and cook covered for 12-14 minutes until the quinoa is tender. Transfer the quinoa to the rice. Pour in the oil, add the pine nuts, bell peppers, salt, and white pepper.
