Ribs braised in coffee-pepper sauce
Ingredients
- Ground ancho chili pepper 4 pieces
- Water 15 fl oz
- Onion 1 head
- Garlic 3 cloves
- Habanero Pepper 2 tablespoons
- Maple syrup 2 tablespoons
- Thick Beef Rib 20 oz
- Lime Juice 1 tablespoon
- Ground Coffee 5 fl oz
- Vegetable Oil 1 tablespoon
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Clean the dry ancho peppers and boil them in boiling water for about 20 minutes. Drain and reserve the broth.
Step 3
Transfer the cooked peppers to a blender and add the finely chopped onion, garlic, maple syrup, chopped chipotle pepper, lime juice, and 1 teaspoon of salt and black pepper. Blend until smooth.
Step 4
Cut the beef ribs into small pieces, sprinkle with salt and pepper. Sear in vegetable oil until golden brown, about 5 minutes on each side.
Step 5
Transfer the ribs to a large pot so they lie in a single layer.
Step 6
Carefully pour the puree over the ribs and braise for 5 minutes, stirring gently.
Step 7
Add 360 ml of water and coffee. Bring to a boil.
Step 8
Cover the pot with foil and place it in the oven. Braise until tender for 3 to 3.5 hours.
