Main Dishes • Scandinavian
Description
This recipe was shared with us by John Smith, co-owner and head chef of a popular American steakhouse.
Ingredients
- Beef Tri-Tip 1 piece
- Ground Black Pepper to taste
- Coarse Salt to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients. Light the charcoal in the grill.
Step 2
Shift some of the coals to the side under the grill so that there is less heat under half of it.
Step 3
Season the steak with salt and pepper on both sides.
Step 4
Transfer the steak to the part of the grill that is not over the coals. Heat it for 2.5 minutes.
Step 5
Flip the steak onto the same part of the grill and leave it for another 2 to 2.5 minutes.
Step 6
Transfer the steak to the hot part of the grill and cook for about 4 more minutes, turning frequently.
Step 7
Transfer the steak to the cold zone of the grill and measure the internal temperature of the meat. The temperature for a medium steak should be around 125°F.
Step 8
The temperature of the steak on the grill should be even lower, around 115°F. If it hasn't reached that internal temperature yet, return the steak to the hot part of the grill and cook it for a couple more minutes on both sides.
Step 9
Once the steak reaches a temperature of 115°F, transfer it to a cutting board and let it rest for a few minutes. During this time, it will continue to cook to perfection.
Step 10
Salt and pepper the steak again while it rests. After a few minutes, you can measure the internal temperature of the meat again; 125°F is the temperature for medium doneness.
Step 11
Slice the steak into thin slices.
Step 12
Serve the ribeye steak with salt and pepper.
