- Chicken skin with fat 10 oz
- Onion 1 head

Step 1
In a medium pot, combine the chicken fat and skin.
Step 2
Add water. Bring to a boil, then reduce the heat and continue to simmer for about 50 minutes.
Step 3
Stir constantly until the fat melts, the water evaporates, and the pieces of skin and fat shrink in size, turning golden and crispy.
Step 4
Add the onion and sauté for about 10 minutes, stirring constantly, until it turns light golden.
Step 5
Strain the rendered chicken fat through a sieve. If desired, use the remaining chicken skin, fat, and onion as a snack by salting them, or mix with liver.
