Ingredients
- Red Curry Powder 3 tablespoons
- Vegetable Oil 3 tablespoons
- Lime 0 oz
- Coconut Milk 15 fl oz
- Sugar 1 teaspoon
- Pork Blood 20 oz
- Fish Oil 2 tablespoons
- Bamboo shoots 0 oz
- Fresh basil leaves 1 tablespoon
Step-by-Step Guide
Step 1
Sauté the curry paste in vegetable oil over medium heat in a wok or regular skillet. Add 0.5 cup (125 ml) of coconut milk and kaffir lime leaves, previously soaked in water for 10 minutes and chopped. Simmer for a few minutes, stirring occasionally.
Step 2
Add the pork cut into small pieces and fry for 5 minutes until the liquid evaporates and the sauce thickens. Pour in the remaining coconut milk, sugar, and fish sauce. Simmer until the pork is cooked through.
Step 3
Taste and add more fish sauce or sugar if needed. The sauce should be spicy-sweet; if it's not spicy enough, add some freshly chopped chili pepper. Add the vegetables a few minutes before serving. Cook for another minute, remove from heat, and stir in the chopped basil leaves. Serve with rice.
