Description
Red Pork with Beans
Ingredients
- Sugar 2 tablespoons
- Pork Blood 15 oz
- Dry White Wine 1 tablespoon
- Grated Ginger Root 0.2 pieces
- Mild Chili Spice 1 piece
- Cinnamon 1 piece
- Soy Sauce 3 tablespoons
- Vegetable Oil to taste
- Water to taste
- Chinese green beans to taste
Step-by-Step Guide
Step 1
First, cut the meat into small pieces.
Step 2
Pour vegetable oil into a wok, heat it over low heat, add 1 tablespoon of sugar, and stir constantly until dissolved. Slightly increase the heat and bring the mixture to a light brown caramel color.
Step 3
Add the pieces of pork to the wok, stir quickly, and to avoid scratching the surface, it's best to use a silicone spatula. Now each piece is coated with the oily-sugar mixture, which means it won't release juice. This way, you'll get a crust on the outside and juicy meat on the inside.
Step 4
Add the wine and sauté a little more. Meanwhile, chop the ginger and cinnamon and add them to the wok.
Step 5
Pour water over the meat just enough to cover it and bring it to a boil. While the water is boiling, chop the chili pepper and add it to the meat. It will be spicy, but just right.
Step 6
As soon as it boils, reduce the heat to a gentle simmer and let it bubble quietly for about 30 minutes. Rice or vegetables make a suitable side dish - for example, green beans - just sauté them in oil, sprinkle with coarse salt, and a worthy side dish for a Chinese-style dinner is ready! Five minutes before the meat is done, add 3 tablespoons of soy sauce to the wok.
