Red Cabbage Steak

Ingredients

  • Red Currant 20 oz
  • Shallot 0 oz
  • Garlic 1 clove
  • Dry White Wine 10 fl oz
  • Butter 0 oz
  • Thyme 2 sprigs
  • Lemongrass 1 stalk
  • Vegetable Oil 0 fl oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Prepare all the ingredients.

Step 2

Cut the cabbage head into steaks about 3–4 cm thick. Wrap each in foil and place in an oven preheated to 355°F for 30 minutes.

Step 3

Finely chop the shallot and garlic.

Step 4

In a pan, heat 20 ml of vegetable oil and sauté the onion and garlic over low heat with the thyme and lemongrass. Add freshly ground pepper.

Step 5

When the contents of the pan start to smell nice, pour in the wine and reduce it by three-quarters.

Step 6

Remove the thyme sprigs and lemongrass.

Step 7

Gradually whisk in the cold butter into the sauce.

Step 8

Unwrap the baked steaks and sauté them in a mixture of vegetable and butter (15 g) until they have a nice crust. Season with salt and pepper.

Step 9

Serve the red cabbage steaks drizzled with the white wine sauce.
