Red cabbage braised with apple
Ingredients
- Spanish onions 1 head
- Vegetable Oil 2 spoons
- Red Currant ½ pieces
- Apple 1 piece
- Red Grape Juice 10 fl oz
- Brown Sugar 5 oz
- Red Wine Vinegar 0 fl oz
- Star anise 2 pieces
- Cinnamon 1 piece
- Thyme 2 sprigs
- Salt to taste
Step-by-Step Guide

Prepare all the ingredients.
Step 2
Shred the cabbage.
Step 3
Peel the red onion and slice it into thin half-moons.
Step 4
Remove the core and seeds from the apple and cut it into cubes.
Step 5
In a large, heavy skillet, heat the vegetable oil, add the onion, and sauté, stirring occasionally, for 10 minutes.
Step 6
Add the cabbage and apple, and sauté everything together for another 5 minutes.
Step 7
Pour in the wine, add sugar, vinegar, star anise, cinnamon, thyme, and 500 ml of boiling water.
Step 8
Season with salt, cover with a lid, and simmer on low heat for about 1 hour and 20 minutes, until the cabbage becomes very tender.
Step 9
30 minutes before the cabbage is done, remove the lid and check: if all the liquid has evaporated, add a little water. At the end, remove the thyme sprigs, cinnamon, and star anise.
Step 10
Serve alone or as a side dish with stewed or roasted meat or duck.
