Red Braised Cabbage
Ingredients
- Malt Vinegar 0 fl oz
- Red Currant 20 oz
- Onion 1 head
- Pickled Apples 1 piece
- Pork fat 5 oz
- Sugar 5 teaspoons
- Red Grape Juice 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Bay leaf to taste
- Ground clove 2 pieces
Step-by-Step Guide
Step 1
Finely shred the cabbage, chop the onion, and peel and slice the apple.
Step 2
In a heavy-bottomed pot, melt the fat and sauté the cabbage for about 5–10 minutes.
Step 3
Add the onion and apple to the pot and continue to sauté.
Step 4
Add 5 teaspoons of sugar with a slight mound, mix well, turn the heat to high, so the cabbage lightly caramelizes.
Step 5
Then pour in the wine vinegar and red wine. Season with pepper, salt, add the bay leaf and cloves. Reduce the heat, cover the pot, and simmer for 20–30 minutes, stirring occasionally.
Step 6
At the end of cooking, you can add more sugar or wine vinegar to taste.
