Red Beans in Tomato Sauce

Ingredients

  • Dried Red Beans 5 oz
  • Olive Oil 2 tablespoons
  • Onion 2 heads
  • Garlic 4 cloves
  • Cumin a pinch
  • Ground coriander a pinch
  • Dried Oregano a pinch
  • Canned Peeled Tomatoes 1 can
  • Tomato Paste 2 tablespoons
  • Salt to taste
  • Chopped Cilantro 1 bunch

Step-by-Step Guide

Step 1

Rinse the beans, cover them with cold water, and let them soak for 8-10 hours. Then change the water and boil the beans until tender (about 45-50 minutes).

Step 2

In a deep skillet, heat the olive oil. Finely chop the onion and garlic. Add cumin, coriander, and oregano to the oil, and after a minute, add the onion and garlic. Sauté for 3-4 minutes.

Step 3

Blend the canned peeled tomatoes until smooth.

Step 4

Add the blended tomatoes and tomato paste to the skillet with the onion, garlic, and spices. Bring to a boil, season with salt to taste, and add the cooked beans. Simmer for 7-10 minutes. Finally, add the cilantro and mix well.
