Ravioli with Corn Purée
Ingredients
- Whole egg 3 pieces
- Butter 0 oz
- Wheat Flour 2 cups
- Garlic 1 clove
- Shallot 1 piece
- Sweet Corn Sticks 1 piece
- Cream 5 oz
- Cayenne Pepper 1 piece
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
For the dough, beat the yolks with the flour.
Step 2
For the filling, place a bit of butter in a pan, add the chopped shallot and garlic. Sauté.
Step 3
In a second pan, pour in some sunflower oil, cut off the corn kernels, sauté them, and add 3/4 of them to the garlic and shallot.
Step 4
In the pan with the shallot, garlic, and corn, add the cream and reduce it. Crumble the cayenne pepper into it.
Step 5
Pour the remaining corn onto a plate and chop bacon or any preferred meat to add.
Step 6
Send the creamy vegetable mixture to a blender — the filling for the ravioli is ready.
Step 7
Roll out the dough for the ravioli. Place the filling on it. Cut out the ravioli.
Step 8
Cook until done.
Step 9
Place the ravioli on a plate and drizzle with hollandaise sauce.
