Ratatouille (Simplified Version)
Ingredients
- Onion 2 heads
- Garlic 6 cloves
- Eggplants 4 pieces
- Tomatoes 6 pieces
- Orange Bell Peppers 6 pieces
- Salad Potatoes 6 pieces
- Olive Oil 5 fl oz
- Rosemary to taste
- Bay leaf 3 pieces
- Salt to taste
- Mixed Ground Peppers to taste
- Courgette 1 piece
Step-by-Step Guide
Step 1
Chop the onion and garlic.
Step 2
Peel the tomatoes. Remove seeds from the peppers and cut them into cubes.
Step 3
In olive oil, sauté the onion until soft, add the garlic, and as soon as the garlic becomes fragrant, add 2 finely chopped tomatoes and the peppers to the pan. Add a little salt, 1 bay leaf, and reduce the heat.
Step 4
When the tomatoes and peppers soften, add the remaining tomatoes, potatoes, eggplants, and zucchini, sliced thinly. Cook over medium heat until the vegetables release their juices, then reduce the heat, cover, and simmer until done.
Step 5
5–10 minutes before finishing, add salt, pepper, a couple of bay leaves, and a bit more rosemary. Mix thoroughly.
