
Rainbow Trout in Mushroom Sauce

Description
You can use any type of fish.
Ingredients
- Golden Trout 4 pieces
- Butter 5 oz
- Fresh Mushrooms 10 oz
- Meyer Lemon Juice 2 spoons
- Salt to taste
- Cream 10 fl oz
- Ground Black Pepper to taste
- Chopped Sage Leaves 1 tablespoon
Step-by-Step Guide
Step 1
Generously rub the fish with salt and pepper, both inside and out.
Step 2
Melt the butter in a skillet and sauté the finely chopped mushrooms for about 5 minutes. Add lemon juice, and season with salt and pepper.
Step 3
Melt the remaining butter in another skillet and lightly sauté the fish until golden brown, about 4 minutes on each side. Transfer to a baking dish in a single layer.
Step 4
Preheat the oven to 355°F.
Step 5
Pour cream into the skillet with the mushrooms, bring to a boil, and pour the sauce over the fish. Place in the oven for 15-20 minutes until the fish is cooked through. Garnish with parsley.
