  • Garlic 3 cloves
  • Salt ½ teaspoon
  • Rosemary 1 tablespoon
  • Parsley 0 oz
  • Thyme 0 oz
  • Butter 0 oz
  • Rack of Lamb 20 oz

Step-by-Step Guide

Step 1

Crush the butter, garlic, salt, and herbs in a mortar until it forms a paste, add the butter, mix, and refrigerate for 20 minutes.

Step 2

Brush the room temperature ribs with the butter, let sit for 20 minutes, place in a baking dish, and put in an oven preheated to 390°F for 25 minutes, or until the meat thermometer reads 65–160°F inside the meat (for medium rare). I also add some rosemary and a couple of garlic cloves to the dish — while the meat is cooking, the kitchen fills with an amazing aroma. Remove the dish from the oven, cover with foil, and let rest for 15 minutes.

Step 3

Carve the rack, cutting between the bones. Place a piece of green butter on the ribs.
