Rabbit Stew with Lemon
Ingredients
- Rabbit 1 piece
- Onion 1 piece
- Garlic 2 cloves
- Olive Oil 3 tablespoons
- Thyme 2 sprigs
- Rosemary 1 tablespoon
- Ground Cumin ¼ teaspoon
- Cilantro 4 sprigs
- Salt to taste
- Ground Black Pepper to taste
- Canned Lemons ½ piece
- Lemon 1 piece
Step-by-Step Guide
Step 1
Peel and thinly slice the onion. Cut the garlic in half lengthwise without peeling. Slice the preserved lemon. Squeeze the juice from the fresh lemon.
Step 2
In a saucepan, heat the olive oil and brown the meat until golden. Add cumin, garlic, and onion, and cook for 3 minutes. Pour in the lemon juice, add the slices of preserved lemon, rosemary, and thyme.
Step 3
Season with salt and pepper and simmer for about 50 minutes. If the meat starts to pull away from the bone, it is ready.
Step 4
When serving, sprinkle with finely chopped cilantro.
