Rabbit in Mustard Crust

Ingredients

  • Salad Potatoes 4 pieces
  • Rabbit 10 oz
  • Dijon Mustard 2 teaspoons
  • Salt to taste
  • Vegetable Oil 2 tablespoons
  • Ground Black Pepper to taste
  • Lemon ½ piece
  • Yogurt powder 3 tablespoons
  • Duck Fat 0 oz
  • Butter 0 oz

Step-by-Step Guide

Step 1

Preheat the grill and bring water to a boil.

Step 2

Peel the potatoes, place them in a pot, and add salt. Pour boiling water over them, bring to a boil, and cook for 8 minutes. Drain the water and let cool.

Step 3

Set the grill rack low (about 10 centimeters from the heat source). Remove the bones from the rabbit meat, divide it into 2 portions, and place on the rack.

Step 4

Mix the vegetable oil with mustard, yogurt, 1 teaspoon of lemon juice, and season with salt and pepper. Brush half of the mixture onto the meat, grill for 6 minutes, then flip, brush with the remaining mixture, and grill for the same amount of time.

Step 5

Cut the potatoes into cubes, heat the fat and butter in a pan, and fry the potatoes for 10 minutes over medium heat, turning frequently, until golden brown. Drain the cooked potatoes on paper towels.

Step 6

Arrange the cooked rabbit on two plates, serve with fried potatoes and lemon slices.
