Ingredients
- Rabbit 20 oz
- Green Figs 5 oz
- Chopped almonds 0 oz

- Chicken Broth 10 fl oz
- Olive Oil 0 fl oz
Step-by-Step Guide
Step 1
Trim the crusts off the bread and cut it into 1x1 cm cubes, crush, peel, and coarsely chop the garlic, peel and dice the onion into medium cubes, chop half of the figs into small cubes and the other half into larger pieces, crush the almonds with the flat side of a knife.
Step 2
Spread the bread and almonds on a baking sheet and dry them in a preheated oven at 390°F for 5 minutes.
Step 3
Sauté the rabbit in a mixture of olive oil and butter over medium heat for 3 minutes, add the onion and cook for another 4 minutes.
Step 4
Blend the bread and almonds with the garlic, rosemary leaves, thyme, and chopped figs in a blender.
Step 5
Add the blended mixture to the rabbit, sauté for 30 seconds, add the chicken broth, bring to a boil, cover, and simmer on low heat for 10 minutes.
Step 6
Add the coarsely chopped figs, season with salt and pepper, and simmer for another 10 minutes, remove from heat and let the dish rest covered for 15 minutes.
Step 7
Serve the rabbit on plates, drizzle with sauce, garnish with parsley leaves, and enjoy.
